Description
Pickled mustard are ubiquitous in China's Sichuan dishes and it is a form of pickled cabbage which is called 'Suan Cai' meaning 'sour vegetable'. 'Suan cai' have consist of the entire head of the vegetable in a brine which provides a sour taste. Pickled mustard can be cooked with poached fish or meat.
